This is one of my favourite veg recipes. For a classic Mediterranean feel use aubergine, corgette, peppers, onion, tomato and lots of garlic. Other vegetables that roast well include sweet potatoes, carrots, beetroot, asparagus, parsnip and pumpkin. Try adding some pine nuts or other roasted seeds towards the end to add another texture.
